Featuring our first purchase of an Ecuadorian coffee!

Coffees from Ecuador are known for their excellent acidity, partially due to the high altitude that Ecuadorian farms occupy. This lot is no exception to that rule although it differs from typical Ecuadorian coffees in its processing.

The coffee cherries spend around thirty hours wet fermenting before being transferred to drying beds. While handling partially fermented, pulped fruit makes handling the coffee throughout processing harder; it adds depth and character to the cup which gives this coffee the kind of fruitiness and structure we love.
