Colombia - Jaime Casallas - Geisha/Sidra - Washed Process
After the rip-roaring success of the Peruvian Geisha lots we purchased through Caravela, we put out the call to Mark, our rep, and asked for anything else that could match the quality of those coffees. This lot, from Jaime Casallas, is what he sent to fit the bill. It's totally stunning, presenting a bunch of complexity and stone fruit. It's an incredibly well balanced cup, and would hold it's ground against any varietal or process.
The Casallas family have embraced the use of multiple varietals on their farm, planting many types in order to establish and understanding of what grows well and how to process it. It's a complex and long process to establish new plants and varietals, with years between planting and harvesting, so this is a real labour of love for them.
