Colombia - San Fermin - Washed
Washed process Colombian coffee, we buy a lot of it.
It's no surprise though really, since our purchasing decisions are based on what tastes best on the cupping table. When we decide which lots to buy we'll always taste blind (that is, not know which cup is which coffee) and choose our preferences there. In this theatre; the acidity, balance and fruitiness of Colombian coffee often elevates these coffees beyond anything else.
Access to these coffees is often made by the incredible work of Caravela on the ground in Colombia where they work with producers to grow and process coffee for the specialty market, this lot is no exception. They clearly succeed in developing coffees that are tailored to our tastes, we enjoy them so much.
The San Fermin Co-Op is in one of our favourite regions to buy from, Southern Tolima and is a classic washed process and profile that we just knew we had to purchse.
