This years glut of fantastic Ethiopian coffees in our offering comes as a result of the incredible work of the Testi Coffee company in Ethiopia. Testi owns a total of 28 stations across Ethiopia, which operate to sell into the international specialty market. This means that farmers bringing their cherry to Testi mills can receive higher prices paid, and we can receive higher quality coffee.

The coffee in this lot, from Ayla Station, is part of Testi's "Premium Cherry Selection" program. The program encourages best growing, harvesting and processing practices and delivers incredible coffee across a large number of stations. We've been lucky enough to snag a few different PCS coffees this year.

This coffee has an incredible balance of acidity and bitterness; it's a clear example of the incredible cup quality that JARC varietals can produce. There's layers of complex fruitiness here; which, when the coffee is hot present like peach, and when it cools more like cooked plum. There's plenty of floral aroma here too, which is typical of natural process coffees from Sidama, it's jasmine like and provides a pleasant accompaniment to the mild bitterness in the cup, reminding us of high quality tea. This coffee is a real testament to Testi's high quality programs and production.
