Mexico - Santuario Ixhuatlan - Anaerobic Natural
Making a return for the Santuario group to our single origin lineup is this specatular coffee from their project in Ixhuatlan. It's a red bourbon, a long time favourite varietal of ours. We've purchased many natural processed red bourbon lots over the years and we think the process fits the varietal's character. Natural processing gives colour and fruitiness to the chocolate and rounded red bourbon character. In the best of these selections, like this one, much of the clean cup character and structure maintains itself through the processing and into the cup.
